Cindy + Danielle Hartog are a dynamic mother and daughter team. The pair of professionally trained chefs were both diagnosed with autoimmune diseases at the same time and turned to a Paleo diet to control their symptoms. Through their journey to healing, they found a love for Paleo cooking and baking. After struggling to find restaurants, cafes, markets + culinary classes to frequent that were safe for their new lifestyle, they decided to open NewBrook Cafe + Cooking School. NewBrook aims to serve their clients gourmet Paleo dishes in a casual and modern setting. NewBrook uses the finest quality ingredients, that are free from gluten, milk, and soy, but never free from taste. Stop in for an amazing salad, hearty toast, tasty entree, delectable dessert, or a class!

Head Chef: Danielle Hartog
Danielle is a 2012 Staples graduate and long time food lover. She attended the Culinary Institute of America, and received her Bachelors degree from UConn.
Pastry Chef: Cindy Hartog
Cindy is a longtime Westport resident and has run Cindy's Sous Chefs for the past 15 years. She attended NYU and The Institute of Culinary Education.
